Physicochemical and Phytochemical Properties of Different Extracts of Sumac Plant (Rhus coriaria L.) Grown in Tunceli, Türkiye

In this study, sumac plant (Rhus coriaria L.) naturally grown in Tunceli (Türkiye) was collected from 5 different provinces and investigated for their phytochemical properties. samples, pH, color, ash amount, total phenolic content (TPC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging capacity, metal chelating copper (II) ion reducing antioxidant capacity (CUPRAC), power, mineral matter content, organic acids as tartaric acid, malic acid citric compounds gallic vanillic caffeic routine, resveratrol, (-)- epicatechin, (+)- catechin hydrate contents were determined. The highest TPC found the acidified methanol extract (AME) DPPH acetonitrile (AAE). It determined that all extracts of sample (S5) Pertek district, higher than other samples but lower ethylene diamine tetra acetic (EDTA). CUPRAC detected at concentration 118.0±3.0 mg equivalent kg-1 (mg CAE kg-1) AME, lowest 10.2±0.6 AAE S5 sample. powers to be power synthetic antioxidants (butylhydroxytoluene (BHT), α tocopherol, vitamin C), rich substances, predominant compound acid.
